Over time and after countless simple mistakes that could have easily
been avoided, I have complied a small guideline to getting closer to
worry-free baking.
I will update this list as I come across more inevitable mishaps :)
1.This should be obvious, but I don't want to assume-always wash your hands thoroughly before you begin.
2. ALWAYS read completely through the recipe before
laying a finger on any cooking utensils! It is not fun to get halfway
through a recipe only to find you are missing a vital piece of
equipment.
3.Always sift your dry ingredients (yes, that includes powdered sugar).
4.
Follow directions to the T; e.g. If it says something must be room
temperature, don't just stick it in the microwave to warm it up (I did
this once, it will not work).
5. When a recipe calls for parchment paper, USE IT! Not wax paper!
6.Baking
soda, baking powder, and cream of tartar are all different in the way
they behave and some are stronger leavening agents than the others, they
are not interchangeable.
7. Be patient! This one I
had to learn the hard way (more than once, I'm slightly ashamed to
admit). If a recipe says to beat for a full seven minutes or to
refrigerate for a full hour, do so!
8. Clean as you go! Trust me on this one.
